Crispy Pan Fried Plantains (paleo, gluten-free, vegan)

Is there anything better than a crispy fried plantain? These are a great alternative to more traditional grain-free carbohydrate options like sweet potatoes or squash. If you are looking for something new, a crispy pan fried plantain is another great option! They make a great breakfast side or an amazing snack paired with your favorite dip, like guacamole. Here’s how you make them:


  • One large ripe plantain

To Make:

  1. Cut the ends off the plantain and cut a slit in the peel lengthwise all the way down the plantain
  2. Peel off the skin. You may need to cut it off if it doesn’t peel easily.
  3. Cut into circles (coins) about the width of your thumb. If you like cleaner looking circles you can cut them thinner but I like mine to be a bit messy looking at the end.
  4. Heat up some coconut oil or bacon fat in a frying pan (I think cast iron works best)
  5. Place your coins in the oil and cook until the bottoms are golden brown and crispy.
  6. Flip the coins and cook until the other side is golden brown.
  7. Using the back of a spoon flatten the coins out. If you left them thick this will result in an imperfect circle shape like the ones pictured below.
  8. Cook on each side for another couple of minutes to brown up the smashed portions.
  9. Serve with a sprinkle of flake or sea salt!
